Looking for a fresh, new way to celebrate St. Patrick’s Day this year? In addition to your green attire, abundance of shamrocks, sip of green beer, and of course “green” recycling habits… try adding more green to your plate in order to give your body the best fuel. Green foods are rich in vitamins and nutrients and extremely important for keeping your body healthy, and yes, even with the luck of the Irish on your side!
Some great green foods include spinach, kale, lettuce and collard greens, broccoli, avocado, kiwi, edamame, artichoke, boo chou, cabbage, green peppers, brussels sprouts, celery, green olives, and green apples! These foods are loaded with antioxidants, a great source of phytonutrients, and are easy on your blood sugar levels. More information on their benefits can be found here.
To keep up with the St. Patty’s day festivities, I am planning to prepare a bunch of green foods this weekend– green eggs and guac, iced mint tea, an “all-you-can-green” salad, and a “mean green fighting machine” smoothie.
